Ingredients

- 4 cups of fresh arugula
- 1 cup of cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup of crumbled feta cheese
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of toasted pine nuts
For the Lemon Vinaigrette:
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of fresh lemon juice
- 1 teaspoon of Dijon mustard
- 1 teaspoon of honey
- Salt and pepper to taste
Instructions
- Combine the arugula, cherry tomatoes, avocado, red onion, and toasted pine nuts in a large salad bowl.
- In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.
- Drizzle the lemon vinaigrette over the salad and toss gently to coat all the ingredients.
- Sprinkle the crumbled feta cheese over the top.
