  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1/2 teaspoon black pepper
  • Olive oil spray

Instructions

  • Prepare the Zucchini:

    1. Preheat the oven to 400Β°F (200Β°C).
    2. Place the grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes.

    2. Scoop about 2 tablespoons of the mixture and form into small patties. Place them on the prepared baking sheet.
  • Bake the Fritters:

    1. Lightly spray the tops of the fritters with olive oil.
    2. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fritters are golden brown and crispy.
  • Serve and Enjoy:

    1. Serve the fritters warm with your favorite dipping sauce, such as tzatziki or marinara sauce.
