Ingredients

  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 2 cups fresh blueberries
  • For the streusel topping:
    • ¼ cup granulated sugar
    • ⅓ cup all-purpose flour
    • ¼ teaspoon ground cinnamon
    • 2 tablespoons unsalted butter, melted

Instructions

  • Preheat your air fryer to 350°F (175°C).
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla extract.
  • Gradually add the flour mixture to the wet ingredients alternately with milk, starting and ending with flour. Gently fold in the blueberries.
  • Pour the batter into a greased 9-inch cake pan.
  • Mix the streusel topping ingredients in a small bowl and sprinkle over the batter.
  • Bake in the preheated air fryer for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool for 10 minutes before serving.
