Ingredients
- 2 tablespoons olive oil
- 1 lb chicken breast, cut into bite-sized pieces
- 1/2 cup buffalo sauce
- 3 cups fresh spinach
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 8 oz fettuccine or pasta of choice
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Cook the chicken:
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is no longer pink in the center, about 5-7 minutes.
- Add the buffalo sauce to the skillet and stir to coat the chicken evenly. Remove the chicken from the skillet and set aside.
- Prepare the Alfredo sauce:
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- Pour in the heavy cream and bring to a simmer. Reduce the heat to low and add the grated Parmesan cheese, stirring until the cheese is melted and the sauce is smooth.
- Add the fresh spinach to the sauce and cook until wilted, about 2-3 minutes.
- Combine and serve:
- Return the cooked chicken to the skillet and stir to combine with the sauce.
- Add the cooked pasta to the skillet and toss to coat with the sauce.
- Serve immediately, garnished with chopped fresh parsley if desired.
