  • 2 tablespoons olive oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 cup buffalo sauce
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz fettuccine or pasta of choice
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Cook the chicken:
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is no longer pink in the center, about 5-7 minutes.
    • Add the buffalo sauce to the skillet and stir to coat the chicken evenly. Remove the chicken from the skillet and set aside.
  • Prepare the Alfredo sauce:
    • In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
    • Pour in the heavy cream and bring to a simmer. Reduce the heat to low and add the grated Parmesan cheese, stirring until the cheese is melted and the sauce is smooth.
    • Add the fresh spinach to the sauce and cook until wilted, about 2-3 minutes.
  • Combine and serve:
    • Return the cooked chicken to the skillet and stir to combine with the sauce.
    • Add the cooked pasta to the skillet and toss to coat with the sauce.
    • Serve immediately, garnished with chopped fresh parsley if desired.

Notes

  • Adjust the amount of buffalo sauce to your preferred level of spiciness.
  • For a lighter version, substitute half-and-half or milk for the heavy cream.
  • This dish can be made ahead and reheated, but add a splash of milk or cream when reheating to keep the sauce creamy.
