Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp chili crisp sauce
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp vegetable oil
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 cup shredded red cabbage
  • 2 green onions, sliced
  • 1 tbsp sesame seeds
  • Fresh cilantro for garnish

Instructions

  • Marinate the Chicken: In a bowl, combine chili crisp sauce, soy sauce, honey, rice vinegar, and minced garlic. Add chicken pieces and marinate for at least 30 minutes.
  • Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 6-8 minutes.
  • Assemble the Bowls: Divide cooked rice into bowls. Top with cooked chicken, shredded carrots, sliced cucumbers, shredded red cabbage, and green onions.
  • Garnish: Sprinkle sesame seeds and fresh cilantro over the top. Add extra chili crisp sauce if desired.
  • Serve: Enjoy immediately or store in the fridge for up to 3 days for meal prep.

Notes

  • Adjust the amount of chili crisp sauce to your spice preference.
  • You can substitute chicken thighs with chicken breasts or tofu for a vegetarian option.
  • Feel free to add other fresh vegetables like bell peppers or snap peas for more variety.
