Ingredients

Scale

For the bread pudding:

  • 6 cups day-old brioche or challah bread, cubed
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/2 cup semi-sweet chocolate chips
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 teaspoon salt

For the topping:

  • 1/4 cup chocolate chips, melted (for drizzling)
  • Powdered sugar (for dusting, optional)

Instructions

  • Prepare the bread and cherries:

    • Preheat your oven to 350Β°F (175Β°C). Grease a 9×13 inch baking dish.
    • Spread the cubed bread evenly in the prepared baking dish. Scatter the cherries and chocolate chips over the bread cubes.
  • Make the cream cheese mixture:

    • In a large bowl, beat the cream cheese and granulated sugar together until smooth and creamy.
    • Add the eggs one at a time, beating well after each addition.
    • Gradually mix in the milk, heavy cream, vanilla extract, almond extract (if using), and salt until well combined.
  • Assemble the bread pudding:

    • Pour the cream cheese mixture evenly over the bread cubes, pressing down gently to ensure all the bread is soaked.
    • Let the mixture sit for about 15 minutes to allow the bread to absorb the liquid.
  • Bake the bread pudding:

    • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the center is set.
    • Remove from the oven and let cool slightly.
  • Add the topping:

    • Drizzle the melted chocolate chips over the top of the bread pudding.
    • Dust with powdered sugar, if desired, before serving.

Notes

  • For an extra indulgent twist, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
  • This recipe can be prepared ahead of time. Simply assemble the bread pudding, cover, and refrigerate for up to 12 hours before baking.
