  • 1/4 cup brown sugar, packed

  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
Streusel Topping
  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups.
  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • To make the streusel topping, combine the flour, brown sugar, and cinnamon in a small bowl. Pour in the melted butter and mix until the mixture resembles coarse crumbs.
  • Sprinkle the streusel topping evenly over the muffin batter.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra burst of flavor, add a handful of chopped nuts or raisins to the batter.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
  • If you don’t have buttermilk on hand, you can make a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
