  • 1 cup (200g) superfine sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh fruits for topping (e.g., strawberries, kiwi, blueberries, passion fruit)

Instructions

  • Preheat your oven to 250Β°F (120Β°C) and line a baking sheet with parchment paper. Draw an 8-inch circle on the parchment paper as a guide.
  • In a clean, dry bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
  • Gradually add the superfine sugar, one tablespoon at a time, beating on high speed until stiff peaks form and the sugar is completely dissolved.
  • Gently fold in the white vinegar, cornstarch, and vanilla extract until well combined.
  • Spoon the meringue onto the parchment paper, using the drawn circle as a guide. Create a slight indent in the center for the toppings.
  • Bake in the preheated oven for 1 hour and 15 minutes, or until the meringue is dry to the touch and slightly golden.
  • Turn off the oven and let the meringue cool completely in the oven with the door slightly ajar.
  • In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  • Once the meringue is completely cool, spread the whipped cream on top and decorate with fresh fruits.
  • Serve immediately and enjoy the delightful combination of textures and flavors.
