  • 20 large mushrooms, stems removed
  • 8 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp paprika (optional, for garnish)
  • 2 tbsp olive oil

Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
  • Clean the mushrooms and remove the stems. Finely chop the stems and set them aside.
  • In a medium bowl, mix together the cream cheese, Parmesan cheese, minced garlic, parsley, green onions, black pepper, and salt until well combined.
  • Add the chopped mushroom stems to the cream cheese mixture and stir until evenly incorporated.
  • Using a small spoon, fill each mushroom cap with the cream cheese mixture, mounding it slightly.
  • Place the stuffed mushrooms on the prepared baking sheet. Drizzle with olive oil.
  • Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  • Sprinkle with paprika before serving, if desired. Serve warm.

Notes

  • For added flavor, mix in cooked and crumbled bacon or sausage into the filling.
