- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper, to taste
- 2 tablespoons flour
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, melt the butter over medium heat. Add the onion and garlic, cooking until translucent.
- Add the mushrooms and thyme, cooking until the mushrooms are soft and browned.
- Sprinkle the flour over the mushrooms, stir to combine, and cook for another minute to remove the raw flour taste.
- Pour in the vegetable broth, stirring continuously to incorporate the flour without lumps. Bring to a simmer.
- Reduce heat and simmer gently for 10 minutes.
- Stir in the heavy cream and season with salt and pepper. Heat through but do not boil after adding the cream.
- Use an immersion blender to blend the soup to your desired consistency.
- Serve hot, garnished with fresh parsley.
