  • 1 pound fresh mushrooms, sliced (e.g., button, cremini, or a mix)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper, to taste
  • 2 tablespoons flour
  • Fresh parsley, chopped (for garnish)

Instructions

  • In a large pot, melt the butter over medium heat. Add the onion and garlic, cooking until translucent.
  • Add the mushrooms and thyme, cooking until the mushrooms are soft and browned.
  • Sprinkle the flour over the mushrooms, stir to combine, and cook for another minute to remove the raw flour taste.
  • Pour in the vegetable broth, stirring continuously to incorporate the flour without lumps. Bring to a simmer.
  • Reduce heat and simmer gently for 10 minutes.
  • Stir in the heavy cream and season with salt and pepper. Heat through but do not boil after adding the cream.
  • Use an immersion blender to blend the soup to your desired consistency.
  • Serve hot, garnished with fresh parsley.

Notes

  • For a vegan version, substitute the butter with olive oil and use coconut cream in place of heavy cream.
