  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups ripe tomatoes, chopped (or two 28-oz cans of crushed tomatoes)
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves, chopped
  • 1 tsp sugar (optional, to taste)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • Fresh basil leaves, for garnish

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sautΓ© until the onion is translucent, about 5 minutes.
  • Add the chopped tomatoes (or canned crushed tomatoes) and vegetable broth to the pot. Bring to a boil, then reduce the heat and let simmer for 20-25 minutes, until the tomatoes are very soft.
  • Remove the pot from heat and stir in the chopped basil. Let the mixture cool slightly.
  • Using an immersion blender, blend the soup until smooth. Alternatively, you can blend the soup in batches using a regular blender.
  • Return the pot to the heat and stir in the sugar (if using), salt, and black pepper. Adjust the seasoning to taste.
  • Stir in the heavy cream and heat the soup gently over low heat until warmed through, about 5 minutes. Do not let it boil.
  • Serve the soup hot, garnished with fresh basil leaves.

Notes

  • For a dairy-free version, substitute the heavy cream with coconut milk or a dairy-free cream alternative.
  • If fresh basil is not available, you can use 1 tablespoon of dried basil instead.
  • This soup can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat gently on the stove before serving.
