Description

Ingredients

  • 1 pound ground beef
  • 1 package taco seasoning
  • 1 head iceberg lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 red bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives
  • 1/2 cup green onions, chopped
  • 1 bag (9.75 oz) Nacho Cheese Doritos, lightly crushed
  • 1 cup Catalina dressing

Instructions

  • In a skillet over medium heat, cook the ground beef until browned. Drain the excess fat and add the taco seasoning according to the package instructions. Set aside to cool.
  • In a large salad bowl, combine the lettuce, tomatoes, black beans, corn, red bell pepper, cheddar cheese, black olives, and green onions.
  • Add the cooled seasoned ground beef to the salad bowl.
  • Just before serving, add the crushed Doritos and toss the salad with Catalina dressing until everything is well coated.

Notes

  • For a lighter version, substitute ground beef with ground turkey or omit the meat entirely for a vegetarian option.
  • Consider using a homemade dressing or a lower-calorie store-bought version to reduce sugar and sodium.
