- 1 pound ground beef
- 1 package taco seasoning
- 1 head iceberg lettuce, chopped
- 2 cups cherry tomatoes, halved
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) whole kernel corn, drained
- 1 red bell pepper, diced
- 1 cup shredded cheddar cheese
- 1/2 cup sliced black olives
- 1/2 cup green onions, chopped
- 1 bag (9.75 oz) Nacho Cheese Doritos, lightly crushed
- 1 cup Catalina dressing
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain the excess fat and add the taco seasoning according to the package instructions. Set aside to cool.
- In a large salad bowl, combine the lettuce, tomatoes, black beans, corn, red bell pepper, cheddar cheese, black olives, and green onions.
- Add the cooled seasoned ground beef to the salad bowl.
- Just before serving, add the crushed Doritos and toss the salad with Catalina dressing until everything is well coated.

- For a lighter version, substitute ground beef with ground turkey or omit the meat entirely for a vegetarian option.
