- 1 pound ground beef
- 1 packet taco seasoning
- 1 head iceberg lettuce, chopped
- 1 can black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 red onion, diced
- 1 cup salsa
- 1 cup sour cream
- 2 cups Fritos corn chips
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- In a skillet over medium heat, brown the ground beef. Drain excess fat and add taco seasoning according to the packet’s instructions.
- In a large bowl, combine the chopped lettuce, black beans, cherry tomatoes, cheddar cheese, and red onion.
- Add the cooked taco-seasoned beef to the salad mixture.
- Just before serving, add the Fritos corn chips and toss the salad to combine.
- Top the salad with salsa and dollops of sour cream. Garnish with fresh cilantro if desired.
Notes
- For a lighter version, use ground turkey or chicken instead of beef and low-fat sour cream.
- Add avocado slices or guacamole for extra creaminess and flavor.
