- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano

Instructions
- Cook the tortellini according to the package instructions, then drain and rinse under cold water to cool.
- In a large bowl, combine the cooled tortellini, cucumber, cherry tomatoes, red onion, and kalamata olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Sprinkle with feta cheese and garnish with fresh parsley before serving.
Notes
- For a protein boost, add grilled chicken or chickpeas.
