Description

Ingredients

  • 1 (16-ounce) package of cheese tortellini
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the tortellini according to the package instructions, then drain and rinse under cold water to cool.
  • In a large bowl, combine the cooled tortellini, cucumber, cherry tomatoes, red onion, and kalamata olives.
  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  • Pour the dressing over the salad and toss to coat evenly.
  • Sprinkle with feta cheese and garnish with fresh parsley before serving.

Notes

  • For a protein boost, add grilled chicken or chickpeas.
  • This salad can be made in advance and refrigerated. Add the feta cheese just before serving to keep it fresh.
