- 1 lb flank steak
- 2 chipotle peppers in adobo sauce, chopped
- 3 cloves garlic, minced
- 1/4 cup lime juice
- 2 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper to taste
- 1 bag tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1/2 red onion, finely chopped
- 1 jalapeño, sliced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sour cream
- 1 tbsp lime juice (for lime crema)
- Lime wedges for serving
Instructions

- Marinate the steak : by combining the minced garlic, chopped chipotle peppers, lime juice, olive oil, ground cumin, salt, and pepper in a bowl. Pour the marinade over the flank steak and place it in a shallow dish or resealable bag. Marinate for one hour or longer, but ideally all night.
- Grill the Steak: Turn up the heat to medium-high on the grill. When the desired doneness is reached, After taking the steak out of the marinade, cook it for five to seven minutes on each side. After allowing the steak to rest for five minutes, thinly cut it against the grain.
- To make lime crema, combine 1 tablespoon of In a small bowl, mix together sour cream and lime juice. and mix until well blended. Set aside.
- Put the Nachos together:Set oven temperature to 400°F, or 200°C. Place a layer of tortilla chips on a large baking sheet. Add half of the shredded cheese, corn, black beans, and steak slices on top. Place another layer of chips on top, then cover with the leftover steak, corn, black beans, and cheese.
- Bake the nachos for ten to fifteen minutes, or until the cheese is bubbling and melted, in an oven that has been prepared.
- Add Fresh Toppings: Remove the nachos from the oven and top with red onion, jalapeño slices, diced avocado, and fresh cilantro.
- Serve: Drizzle with lime crema and serve with lime wedges on the side.
Notes
- For extra heat, add more chipotle peppers or a dash of hot sauce.
- You can substitute flank steak with skirt steak or ribeye for a different texture.
- These nachos are best enjoyed immediately to ensure the chips stay crispy.
