- 4 medium zucchinis, sliced lengthwise
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup Calabrian chiles, chopped
- 1/2 cup crumbled goat cheese
- 1/4 cup pepitas (pumpkin seeds), toasted
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your grill to medium-high heat.
- Season the slices of zucchini with salt and pepper. after brushing them with olive oil.
- Grill the zucchini for 3-4 minutes on each side, until charred and tender.
- Remove from the grill and place on a serving platter.
- Sprinkle the chopped Calabrian chiles evenly over the grilled zucchini.
- Top with crumbled goat cheese and toasted pepitas.
- Squeeze in some freshly made lemon juice, and sprinkle chopped parsley on top.
- Serve warm or at room temperature.
Notes
- To add another dimension of taste, marinate the zucchini in olive oil and garlic for 30 minutes before grilling.
- If you prefer less heat, reduce the amount of Calabrian chiles.
