  • 1 pound large shrimp, peeled and deveined
  • 12 ounces spaghetti or linguine
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 lemon, zest and juice
  • 1/4 cup white wine or chicken broth
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
  • Add the garlic and red pepper flakes to the skillet and sautΓ© for about 1 minute, or until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the lemon juice, lemon zest, and white wine (or chicken broth). Bring to a simmer and cook for 2-3 minutes, allowing the liquid to reduce slightly.
  • Reduce the heat to low and stir in the butter until melted and well combined.
  • Add the cooked pasta and shrimp back to the skillet, tossing to coat everything evenly in the sauce.
  • Sprinkle with freshly grated Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
  • Serve immediately with extra lemon wedges on the side if desired.

Notes

  • For a richer flavor, you can add a splash of heavy cream to the sauce.
  • If you prefer a spicier dish, increase the amount of red pepper flakes.
