- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 4 boneless, skinless chicken breasts
Instructions
- Get the marinade ready: Olive oil, lemon juice, minced garlic, rosemary, thyme, parsley, Dijon mustard, salt, black pepper, and crushed red pepper flakes (if used) should all be combined in a medium-sized bowl.
- To marinate the chicken, put the breasts in a shallow dish or a large plastic bag that can be sealed. Make sure every piece of chicken is well covered by pouring the marinade over it. For optimal taste, cover the dish or seal the bag and refrigerate for at least 30 minutes, but ideally 2-4 hours.
- Prepare the chicken: Either preheat your oven to 375°F (190°C) or your grill to medium-high heat. Take the chicken out of the marinade and let any extra to fall off. The chicken should be cooked through and the internal temperature should reach 165°F (74°C) after grilling it for 6–7 minutes on each side. To ensure that the chicken is cooked thoroughly, put it in a baking dish and bake it for 25 to 30 minutes.
