Instructions

  • Prepare the Pan: A 9×13-inch baking pan may be lightly greased or lined with parchment paper.
  • Make the Rice Krispie Base: In a large saucepan, melt the butter over low heat. Add the micro marshmallows and whisk until totally melted and smooth. Take off the heat and thoroughly stir in the lemon curd.
  • Mix in Cereal: Gradually add the Rice Krispies cereal, stirring until evenly coated with the marshmallow mixture.
  • Set the Base: Press the mixture onto the baking pan you had ready using wax paper or a greased spatula. Let it cool and set.
  • Prepare the Meringue: In a dry, clean basin, first mix the egg whites with cream of tartar. Whip them on medium speed until they reach soft peaks. Then, slowly incorporate the sugar, adding it one tablespoon at a time, while increasing the speed to high, until you achieve stiff, glossy peaks.
  • Top with Meringue: Spread the meringue evenly over the Rice Krispie base.
  • Torch the Meringue: Brown the meringue gently with a cooking torch, or place the pan under the broiler for 1-2 minutes until the meringue is golden brown. Watch closely to prevent burning.
  • Cool and Serve: Let the goodies cool fully before cutting into squares and serving.
