- 1 tablespoon ginger, minced
- 1 tablespoon maple syrup or agave nectar

- 1 red bell pepper, sliced
- 1 small onion, sliced
- 1 cup snap peas
- 1 carrot, julienned
- Fresh cilantro, chopped (for garnish)

Instructions

Prepare the Tofu:
- Cut the pressed tofu into bite-sized cubes.
- In a bowl, combine soy sauce, lime juice, olive oil, lemongrass, garlic, ginger, and maple syrup. Mix well.
- Add the tofu cubes to the marinade, ensuring they are well-coated. Marinate for at least 30 minutes, or up to 2 hours for more flavor.

Cook the Tofu:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Remove the tofu from the marinade, reserving the marinade for later use.
- Add the tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.

Stir-Fry the Vegetables:
- In the same skillet, add the sliced red bell pepper, onion, snap peas, and carrot.
