  • For the Marinade:

    • 1 block extra-firm tofu, drained and pressed
    • 3 tablespoons soy sauce (or tamari for gluten-free)
    • 2 tablespoons lime juice
    • 2 tablespoons olive oil
    • 2 stalks lemongrass, finely chopped (white part only)
    • 3 cloves garlic, minced
    • 1 tablespoon ginger, minced
    • 1 tablespoon maple syrup or agave nectar
  • For the Stir-Fry:

    • 1 tablespoon vegetable oil
    • 1 red bell pepper, sliced
    • 1 small onion, sliced
    • 1 cup snap peas
    • 1 carrot, julienned
    • Fresh cilantro, chopped (for garnish)
    • Sesame seeds (for garnish)

Instructions

  • Prepare the Tofu:

    1. Cut the pressed tofu into bite-sized cubes.
    2. In a bowl, combine soy sauce, lime juice, olive oil, lemongrass, garlic, ginger, and maple syrup. Mix well.
    3. Add the tofu cubes to the marinade, ensuring they are well-coated. Marinate for at least 30 minutes, or up to 2 hours for more flavor.
  • Cook the Tofu:

    1. Heat vegetable oil in a large skillet or wok over medium-high heat.
    2. Remove the tofu from the marinade, reserving the marinade for later use.
    3. Add the tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
  • Stir-Fry the Vegetables:

    1. In the same skillet, add the sliced red bell pepper, onion, snap peas, and carrot.
    2. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Combine and Serve:

    1. Return the tofu to the skillet.
    2. Pour the reserved marinade over the tofu and vegetables. Stir well to combine and heat through.
    3. Garnish with fresh cilantro and sesame seeds before serving.
  • Serve and Enjoy:

    1. Serve the lemongrass tofu hot with steamed rice or noodles.

Notes

  • For an extra kick, add a chopped chili pepper to the marinade.
  • You can prepare the marinade ahead of time and store it in the refrigerator for up to 3 days.
