- 2 carrots, peeled and diced
- 2 celery stalks, diced

- 6 cups vegetable broth

- 1 teaspoon lemon juice (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- SautΓ© the Vegetables:
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, carrots, and celery. SautΓ© for about 5-7 minutes, until the vegetables are softened.
- Stir in the minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for another minute, until fragrant.
- Add Lentils and Broth:
