For the Meatballs:
- 1 lb ground beef
- 1/2 cup breadcrumbs

- 1/4 cup water (if needed to thin the sauce)
For Assembly:
- 4 sub rolls
- 1 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese (optional)
- Fresh basil leaves (optional, for garnish)
Instructions
- Make the Meatballs:
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, black pepper, dried oregano, and dried basil. Mix well until all ingredients are evenly incorporated.
- Shape the mixture into 1-inch meatballs.
- Cook the Meatballs:
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides, about 8-10 minutes. Transfer the meatballs to a paper towel-lined plate to drain excess oil.
- In the same skillet, add the marinara sauce. If the sauce is too thick, add 1/4 cup water to thin it out. Bring the sauce to a simmer.
- Return the meatballs to the skillet and simmer in the sauce for 15-20 minutes, until the meatballs are cooked through and the sauce is heated.
- Assemble the Sandwiches:
- Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
- Cut the sub rolls lengthwise, but not all the way through, and place them on the prepared baking sheet.
- Spoon meatballs and sauce into each roll, dividing them evenly. Top each sub with shredded mozzarella cheese and a sprinkle of Parmesan cheese, if using.
- Bake the sandwiches in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Serve:
- Garnish with fresh basil leaves, if desired. Serve the meatball subs hot.
