For the Meatballs:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 2 tbsp olive oil (for frying)

For the Sauce:

  • 2 cups marinara sauce (store-bought or homemade)
  • 1/4 cup water (if needed to thin the sauce)

For Assembly:

  • 4 sub rolls
  • 1 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese (optional)
  • Fresh basil leaves (optional, for garnish)

Instructions

  • Make the Meatballs:
    • In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, black pepper, dried oregano, and dried basil. Mix well until all ingredients are evenly incorporated.
    • Shape the mixture into 1-inch meatballs.
  • Cook the Meatballs:
    • Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides, about 8-10 minutes. Transfer the meatballs to a paper towel-lined plate to drain excess oil.
    • In the same skillet, add the marinara sauce. If the sauce is too thick, add 1/4 cup water to thin it out. Bring the sauce to a simmer.
    • Return the meatballs to the skillet and simmer in the sauce for 15-20 minutes, until the meatballs are cooked through and the sauce is heated.
  • Assemble the Sandwiches:
    • Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
    • Cut the sub rolls lengthwise, but not all the way through, and place them on the prepared baking sheet.
    • Spoon meatballs and sauce into each roll, dividing them evenly. Top each sub with shredded mozzarella cheese and a sprinkle of Parmesan cheese, if using.
    • Bake the sandwiches in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
  • Serve:
    • Garnish with fresh basil leaves, if desired. Serve the meatball subs hot.

Notes

  • You can make the meatballs ahead of time and store them in the refrigerator for up to 2 days or freeze them for up to 3 months.
  • For a spicier version, add a pinch of red pepper flakes to the marinara sauce.
