- 1 lb chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne pasta
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season Chicken: Toss the chicken pieces with 1 tablespoon of Cajun seasoning.
- Cook Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. After adding, grill the chicken until it is browned all over. Remove the chicken and set aside.
- Sauté Veggies: In the same pot, add the onion and bell pepper. Sauté until softened, about 5 minutes. Add the garlic and remaining Cajun seasoning, and cook for another minute.
- Combine Ingredients: Add the diced tomatoes, chicken broth, heavy cream, and pasta to the pot. Stir to combine.
- Cook Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the pasta is cooked through and the sauce has thickened, about 15-20 minutes.
- Add Chicken & Cheese: Return the cooked chicken to the pot and stir in the Parmesan cheese. Simmer until the cheese has melted and the chicken is well cooked.
- Toss to combine the salt and pepper, then serve. Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add extra Cajun seasoning or a pinch of cayenne pepper.
- This recipe can be made with any pasta shape you prefer.
