  • For the cookies:

    • 1 cup all-purpose flour
    • 1/2 cup unsweetened cocoa powder
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
  • For the filling:

    • 2 cups vanilla ice cream, softened
    • 1 cup crushed Oreo cookies

Instructions

  • Preheat your oven to 350Β°F (175Β°C). Line baking sheets with parchment paper.
  • In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In another bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients until well combined.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 8-10 minutes or until the cookies are just set. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Once cookies are cool, spread softened ice cream on the flat side of half the cookies, sprinkle with crushed Oreos, then top with another cookie to make a sandwich. Press gently to spread the filling to the edges.
  • Freeze the sandwiches until firm, about 2 hours, before serving.
