For the Topping:
- 1/4 cup unsalted butter, melted
- 1/2 cup brown sugar, packed
- 3–4 ripe bananas, sliced lengthwise or into rounds
For the Cake:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
Instructions
- Preheat the oven to 350Β°F (175Β°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- For the topping, pour the melted butter into the prepared cake pan and spread it evenly. Sprinkle the brown sugar over the butter. Arrange the banana slices over the sugar in a single layer.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and peanut butter together until creamy. Add the granulated sugar and continue to beat until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter over the bananas in the cake pan, spreading it evenly.
- Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10-15 minutes. Run a knife around the edges to loosen it, then invert the cake onto a serving plate. Remove the parchment paper.
- Serve the cake warm or at room temperature, optionally with a dollop of whipped cream or a scoop of vanilla ice cream.
Notes
- For an extra touch, sprinkle chopped peanuts over the bananas before adding the batter.
