    • 1 block extra-firm tofu, drained and pressed
    • 2 tablespoons olive oil
    • 2 tablespoons soy sauce
    • 1 tablespoon chili powder
    • 1 teaspoon cumin
    • 1 teaspoon smoked paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and pepper to taste
  • For the Tacos:

    • 8 small corn tortillas
    • 1 cup shredded lettuce
    • 1/2 cup diced tomatoes
    • 1/2 cup diced red onion
    • 1/2 cup corn kernels
    • 1 avocado, sliced
    • Fresh cilantro leaves
  • For the Lime Crema:

    • 1/2 cup vegan sour cream
    • 1 tablespoon lime juice
    • 1 teaspoon lime zest
    • Salt to taste

Instructions

  • Prepare the Tofu:

    1. Preheat the oven to 375Β°F (190Β°C).
    2. Using a fork, shred the pressed tofu into a bowl.
    3. Add olive oil, soy sauce, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well to coat the tofu.
    4. Spread the tofu mixture onto a baking sheet lined with parchment paper.
    5. Bake for 25-30 minutes, stirring halfway through, until the tofu is golden and crispy.
  • Prepare the Lime Crema:

    1. In a small bowl, combine vegan sour cream, lime juice, lime zest, and salt. Mix well and set aside.
  • Assemble the Tacos:

    1. Warm the corn tortillas in a skillet over medium heat or directly over a gas flame for a few seconds on each side.
    2. Divide the shredded tofu evenly among the tortillas.
    3. Top with shredded lettuce, diced tomatoes, red onion, corn kernels, avocado slices, and fresh cilantro.
    4. Drizzle with lime crema.
