Description

Shrimp Ceviche is a quick, no-cook dish featuring shrimp marinated in lime and lemon juices, mixed with red onion, cucumber, bell pepper, and jalapeño.   • 1 lb fresh shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1/2 cup fresh lemon juice
  • 1/2 red onion, finely diced
  • 1 cucumber, peeled, seeded, and diced
  • 1 red bell pepper, finely diced
  • 1 jalapeño, finely diced (remove seeds for less heat)
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 avocado, diced (optional)
  • Tortilla chips for serving (optional)

Instructions

  • Get the shrimp ready: Shrimp should be chopped into tiny, bite-sized pieces and put in a big glass or ceramic dish.
    Marinate: Make sure the shrimp are completely soaked by pouring the lime and lemon juice over them. Place plastic wrap over the bowl and place it in the refrigerator for 30 to 1 hour, or until the citrus liquids have completely “cooked” the shrimp and it becomes opaque.
    Mix the Veggies: Mix the bell pepper, cherry tomatoes, jalapeño, red onion, cucumber, and cilantro in a separate bowl.

    Mix: After the shrimp are cooked, squeeze off any extra citrus juice and stir in the chopped veggies. Mix well to blend.
    Season: To taste, add salt and pepper. Just before serving, gently fold in the cubed avocado, if using.
    Serve: To let the flavors to mingle, serve right away with tortilla chips or, to let them sit for up to two hours, cover and chill.

Notes

  • Add some additional jalapeño or a dab of spicy sauce for some spice.
  • Sliced red onion and jalapeño should be used in smaller amounts if you want a softer taste.
  • Although it is best enjoyed fresh, shrimp ceviche may be kept in the fridge for up to a day.
