- 3–4 pounds corned beef brisket, with spice packet
- 1 large onion, cut into quarters
- 4 cloves garlic, minced
- 3–4 large carrots, cut into large chunks
- 6–8 small red potatoes, halved
- 1 small head of cabbage, cut into wedges
- 4 cups beef broth
- 2 tablespoons whole grain mustard
- 2 bay leaves
- 1 teaspoon black peppercorns
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Assemble the slow cooker by placing the chopped garlic and onion quarters in the bottom.
- Add vegetables: Arrange the carrots, potatoes, and cabbage around the edges of the slow cooker.
- Add corned beef: Rinse the corned beef brisket under cold water to remove excess brine, then place it on top of the vegetables.
- Spices and broth: Sprinkle the spice packet that came with the corned beef over the meat. Add the bay leaves, black peppercorns, thyme, and rosemary.
- Mustard and broth: Spread the whole grain mustard over the top of the corned beef. Pour the beef broth around the meat and vegetables.
- Slow cook: Cover the slow cooker with the lid and cook on low for 8-10 hours, or until the corned beef is tender and easily shredded with a fork.
- Serve: Carefully remove the corned beef from the slow cooker and let it rest for a few minutes before slicing. Serve with the cooked vegetables and some of the broth spooned over the top.
