Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sour cream
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
To prepare the dry ingredients, whisk together the flour, sugar, baking soda, baking powder, and salt in a large mixing basin.
Mix Wet Ingredients: Beat together the sour cream, eggs, milk, and vanilla extract in a another dish. Blend until silky.
Mixtures should be combined by adding the liquid to the dry. Gently stir until well blended. Don’t overmix; the batter should still have some lumps.
Heat the Pan: Turn up the heat to medium on a nonstick pan or griddle. Grease lightly with oil or butter.
Cook Pancakes: For each pancake, pour 1/4 cup of batter into the griddle. Simmer until surface bubbles form and edges seem solid, about 2 to 3 minutes. Cook for a further one to two minutes after flipping, or until the opposite side is also golden brown.
Serve: Top with your preferred toppings, including whipped cream, fresh berries, or maple syrup, and serve warm.
Notes
- For really fluffy pancakes, let the batter rest for five to ten minutes before frying.
- You can substitute Greek yogurt for sour cream for a tangier flavor.
- These pancakes freeze well. To reheat, simply microwave or warm in a toaster.
