For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Cake:
    • Preheat the oven to 350°F (175°C). Grease and flour a 9 x 13-inch baking pan.
    • Mix the flour, baking soda, nutmeg, cinnamon, cloves, baking powder, and salt in a medium-sized basin.
    • Whisk together the eggs, granulated sugar, and brown sugar. well in a large bowl. Blend in the oil and vanilla essence until well combined.
    • Mixing just until mixed, gradually add the dry ingredients to the wet mixture. Add the grated zucchini and fold.
    • Pour the batter into the pan, being sure to spread it evenly.
    • When a toothpick put into the middle Bake for 35 to 40 minutes or until clean. On a wire cooling rack, allow the cake to cool completely in the pan.
  • Prepare the Frosting:
    • Cream cheese and butter should be combined and beaten until smooth and creamy in a big basin.
    • One cup of powdered sugar at a time, gradually add it while beating well after each addition.
    • Add the vanilla essence and stir until well incorporated.

    Assemble the Cake:

  • After the cake has fully cooled, cover the top with a uniform covering of cream cheese icing.
  • Cut into pieces and present. Have fun!
