Description

This Strawberry Poke Cake is a delightful and refreshing dessert perfect for any occasion. A moist vanilla cake is infused with sweet strawberry gelatin, topped with a creamy whipped topping and fresh strawberries. It’s an easy, crowd-pleasing treat that’s both delicious and visually appealing.

Ingredients

Scale
  • 1 box vanilla cake mix (plus ingredients needed for mix)
  • 1 (3 oz) package strawberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 (8 oz) container whipped topping (such as Cool Whip)
  • Fresh strawberries, sliced

Instructions

  • Bake the Cake: Prepare and bake the vanilla cake according to the package instructions in a 9Γ—13-inch baking dish. Allow the cake to cool completely.
  • Poke the Cake: Once the cake is cool, use the handle of a wooden spoon to poke holes all over the cake, about 1 inch apart.
  • Prepare Gelatin: In a medium bowl, dissolve the strawberry gelatin in 1 cup of boiling water. Stir in 1/2 cup of cold water.
  • Pour Gelatin: Carefully pour the gelatin mixture over the cake, ensuring it seeps into the holes. Refrigerate the cake for at least 2 hours.
  • Add Topping: Spread the whipped topping evenly over the chilled cake.
  • Garnish: Arrange sliced fresh strawberries on top of the whipped topping.
  • Serve: Slice and serve chilled.

Notes

  • For an extra burst of flavor, use strawberry cake mix instead of vanilla.
  • You can substitute homemade whipped cream for the whipped topping if desired.
  • Store leftovers in the refrigerator for up to 3 days.
