  • 3 ripe bananas, mashed
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsweetened almond milk
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease with coconut oil.
  • In a large bowl, mix together the mashed bananas, unsweetened applesauce, melted coconut oil, maple syrup, and vanilla extract until well combined.
  • In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  • Add the almond milk to the batter and stir until smooth. If using, fold in the chopped nuts.
  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra boost of flavor, add a handful of dark chocolate chips or dried fruit to the batter.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days, or frozen for up to 1 month.
