- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup or agave nectar
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsweetened almond milk
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease with coconut oil.
- In a large bowl, mix together the mashed bananas, unsweetened applesauce, melted coconut oil, maple syrup, and vanilla extract until well combined.
- In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Add the almond milk to the batter and stir until smooth. If using, fold in the chopped nuts.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
