Ingredients

Scale

For the Sweet Potato Steaks:

  • 2 large sweet potatoes, washed and cut into 1-inch thick slices
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

For the Avocado Salsa:

  • 2 ripe avocados, diced
  • 1 small red onion, finely chopped
  • 1 medium tomato, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  • Preheat Oven: Preheat your oven to 425Β°F (220Β°C).

  • Prepare Sweet Potatoes: Place the sweet potato slices on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, onion powder, ground cumin, black pepper, and salt. Toss to coat evenly.

  • Roast Sweet Potatoes: Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized.

  • Make Avocado Salsa: While the sweet potatoes are roasting, prepare the avocado salsa. In a medium bowl, combine diced avocados, red onion, tomato, cilantro, lime juice, salt, and pepper. Mix gently to combine.

  • Serve: Once the sweet potatoes are done, transfer them to serving plates and top with avocado salsa. Serve immediately.

Notes

  • You can customize the spices to suit your taste preferences.
