- 1 can (15 oz) corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced

- 2 cloves garlic, minced
- 1 jalapeño, seeded and finely chopped (optional)
- 1/2 cup fresh cilantro, chopped
For the Vinaigrette:
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp honey or agave nectar
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Prepare the Vegetables:
- In a large bowl, combine the black-eyed peas, black beans, corn, red bell pepper, green bell pepper, red onion, minced garlic, jalapeño (if using), and cilantro.
- Make the Vinaigrette:
- In a small bowl or a jar with a lid, whisk together the olive oil, red wine vinegar, lime juice, honey, ground cumin, chili powder, salt, and black pepper until well combined.
- Combine and Marinate:
- Pour the vinaigrette over the bean and vegetable mixture. Toss everything together until well coated.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
- Serve:
- Serve the Texas Caviar chilled or at room temperature with tortilla chips, as a topping for grilled meats, or as a standalone salad.
Notes
- For added sweetness, you can mix in some diced mango or pineapple.
