Texas Caviar is a vibrant and zesty dip made with black-eyed peas, corn, bell peppers, and a tangy vinaigrette. This colorful dish is perfect for parties, potlucks, or as a healthy snack.   • 2 cans (15 oz each) black-eyed peas, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and finely chopped (optional)
  • 1/2 cup fresh cilantro, chopped

For the Vinaigrette:

  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp honey or agave nectar
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Prepare the Vegetables:
    • In a large bowl, combine the black-eyed peas, black beans, corn, red bell pepper, green bell pepper, red onion, minced garlic, jalapeño (if using), and cilantro.
  • Make the Vinaigrette:
    • In a small bowl or a jar with a lid, whisk together the olive oil, red wine vinegar, lime juice, honey, ground cumin, chili powder, salt, and black pepper until well combined.
  • Combine and Marinate:
    • Pour the vinaigrette over the bean and vegetable mixture. Toss everything together until well coated.
    • Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
  • Serve:
    • Serve the Texas Caviar chilled or at room temperature with tortilla chips, as a topping for grilled meats, or as a standalone salad.

Notes

  • For added sweetness, you can mix in some diced mango or pineapple.
  • If you prefer a spicier dip, leave the seeds in the jalapeño or add a pinch of cayenne pepper to the vinaigrette.
  • This dish can be made a day in advance and stored in the refrigerator. The flavors will intensify as it marinates.
