  • 1 cup almond milk (or any plant-based milk)
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  • In a blender, combine the silken tofu, almond milk, vegetable oil, and vanilla extract. Blend until smooth.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Pour the tofu mixture into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook for another 2-3 minutes, or until golden brown and cooked through.
