  • 1 whole chicken (about 45 lbs)
  • 2 lbs potatoes, peeled and quartered
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Oven Prep: Set the oven’s temperature to 375°F, or 190°C.
  • Prepare Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, thyme, rosemary, salt, and pepper.
  • Marinate Chicken: Place the whole chicken in a large roasting pan. Rub the marinade all over the chicken, making sure to coat it well. Let it marinate for at least 30 minutes, or refrigerate for up to 2 hours for more flavor.
  • Add Potatoes: Arrange the quartered potatoes around the chicken in the roasting pan. Drizzle any remaining marinade over the potatoes.
  • Roast Chicken and Potatoes: Roast in the preheated oven for about 1 hour and 30 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (75°C).
  • Baste Occasionally: During roasting, baste the chicken and potatoes with the pan juices every 30 minutes to keep them moist and flavorful.
  • Rest and Serve: Once done, let the chicken rest for 10 minutes before carving. Add some freshly cut parsley as a garnish and serve the roasted potatoes alongside.

Notes

  • Raise the temperature of the oven to for extra crispy skin  425°F (220°C) during the last 20 minutes of roasting.
  • Add some vegetables like carrots or onions to the roasting pan for a complete meal.
  • You may keep leftovers in the fridge for up to three days.
